 Hello, Greetings, Welcome to my channel, so sir we are cooking eggplant & chili curry in our kitchen today. Yummy eggplant & chili curry & such an easy recipe, all of u will say, hey, it was fun. yes, you got it right one recipe includes two flavors n 2 different recipes. Because I put eggplant n green chili both in one dish, so u can make it the same way for both recipes if u want to try them separately/ individually n do tell me in the comments how do u like this easy recipe. Let's move on to ingredients, here we have eggplant/ brinjal, large green chilies, oil, poppy, white sesame, nigella, coriander seeds, cumin, salt, red chili round, curry leaves, medium onions, tamarind pulp, roasted peanuts, crushed coconut, & turmeric. I have mentioned the quantity. First of all, we will burn onions, including the skins, we have to blacken them completely. Burn them from above, we have to burn them, including the skins. we will do this without peeling their skins. After that we, grind the onions by adding water in a blender, we neatly cleaned n peeled onions before grinding n here is this onion mixture ready. & now we dry roast the dry ingredients but before dry roast, we are going to take away some red round chilies from our dry ingredients. as mentioned above, dry ingredients include sesame, poppy, coriander, peanuts, coconut, cumin. this is my frying pan n I m going to roast them. now I m going to grind the dry ingredients in a coffee grinder, I m going to grind them to a coarse form n not into powder form. So here is the coarsely ground dry spices. After that, we stir fry the green chilies in the pan with a Lil oil. We fry them till they change their color to slightly brown. look we want this texture on our chilies, Now I m going to add my ground spices to my Eggplants n chilies. I m going to add salt too. I have started putting my spices on my eggplants n chilies. meanwhile, I m going to add oil to my pot n add onion paste to it, Fry till it cooks properly. & its water dries up completely. There are tiny burnt black parts present in that mixture it will give the desire taste n aroma to our dish. This is my Tamarind pulp I already made this, Now I m going to add the remaining dried spices in the onion mixture, round red chilies a pinch of turmeric, turmeric will enhance the color n flavor of the dish, especially the color. Look at the brinjals we cut n put dried spices in them n in our green chilies. Now I m adding my brinjal, curry leaves, green chilies to my onion mixture,n a pinch of nigella.  We neither roast or grind nigella we put it in its original form. this curry is very yummy. I have added tamarind pulp in it too. Now we are going to cook this on low flame for about 20-25 min. when Oil separates from it we are going to dish out this in our beautiful bowl. This is so yummy n one of my favorite cuisine. U have to try this yummy dish n do tell me how do u feel after trying this dish. This is a very simple & easy recipe n this can be store in the refrigerator for 5 days, or a week, in fact for a good 15 days but in my home, this is going to b finished within 15 days. Mashah Allah. The shopkeepers always store in the same way in the fridge, it can be consumed in a month, INSHAHALLAH IT WILL NOT get rotten. See, the final look of the dish.
